Avocado Egg Salad
A delightful blend of creamy avocado with hearty eggs, perfect for a nourishing and flavorful meal.
INGREDIENTS:
1 ripe avocado, peeled and pitted.
4 large hard-boiled eggs, chopped.
2 tbsp mayonnaise.
1 tsp Dijon mustard.
1 tbsp lemon juice.
1/4 cup red onion, finely chopped.
2 tbsp fresh parsley or cilantro, chopped.
Salt and pepper to taste.
Optional: a pinch of paprika or chili flakes for garnish.
DIRECTIONS:
