INGREDIENTS:

Crust

01 2 cups cinnamon graham cracker crumbs
02 1/4 cup granulated sugar
03 6 tablespoons butter, melted

Cheesecake

04 2 (8-ounce) packages cream cheese, softened
05 1/2 cup packed brown sugar
06 2 teaspoons vanilla extract
07 1/2 teaspoon cinnamon
08 2 tablespoons all-purpose flour
09 2 large eggs

Apples

10 3 Gala apples, peeled and diced
11 1/4 cup packed brown sugar
12 1/2 teaspoon cinnamon

Crisp Topping

13 1/2 cup all-purpose flour
14 1/2 cup quick oats
15 1/2 cup brown sugar
16 2 teaspoons cinnamon
17 4 tablespoons unsalted butter, melted

DIRECTIONS:

Step 01

Preheat oven to 350 degrees Fahrenheit. Place a large sheet pan on the bottom rack filled halfway with water. Line a 9-inch springform pan with parchment paper.

Step 02

Mix together the graham cracker crumbs, granulated sugar, and melted butter. Press the mixture evenly onto the bottom of the prepared springform pan.

Step 03

Beat the cream cheese and brown sugar until very creamy. Add the vanilla extract, cinnamon, and flour, mixing thoroughly. Add the eggs and mix gently until combined. Do not overmix.

Step 04

Pour the cheesecake batter onto the prepared crust.
