INGREDIENTS:

3 lb Yukon Gold potatoes peeled and chunked

1 yellow onion thinly sliced

3 cloves garlic minced

1/2 cup butter unsalted, cut into pieces

1 cup chicken broth or vegetable broth

1 tsp salt plus more to taste

1/2 tsp black pepper

1/2 tsp dried thyme optional

1/2 cup milk or half-and-half, warmed

1/4 cup sour cream optional

1/4 cup parsley fresh, chopped

2 green onions sliced

DIRECTIONS:

Place sliced onion and garlic in the bottom of the slow cooker.
Add potatoes on top, then scatter butter pieces over everything.
Season with salt, pepper, and thyme. Pour broth over the mixture.
Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours until potatoes are very tender.
Switch to WARM. Add warmed milk and sour cream, then mash to desired consistency.
