Meatloaf with Mashed Potatoes & Cheese
This recipe is really easy to put together, it tastes great, and is a wonderful comfort food. The Meatloaf with Mashed Potatoes and Cheese is also kid approved.

INGREDIENTS:

For the meatloaf:

1 OnionChopped
1 tbsp. Olive Oil
½ cup Frozen Peas
¾ cup Breadcrumbs
3 tsp. GarlicMinced
1 ½ lb. BeefGround
1 Large Egg
¼ cup Tomato Sauce
¼ cup ParsleyChopped
¼ cup BBQ Sauce
Salt And Pepper To Taste

For the potatoes:

1 ½ Lb Potatoespeeled, cubed
¼ cup Heavy Whipping Cream
4 tbsp. Butter
Salt And Pepper To Taste
1 cup Cheddar CheeseShredded

DIRECTIONS:

Heat the oven to 400 degrees.
In a skillet over medium heat, cook the onions and garlic in the oil until softened. Remove and let cool.
Add the remaining ingredients for the meatloaf to a mixing bowl with the onions, and knead with your hands until well combined.
Form the mixture into a loaf shape in a 9×13 baking dish. Bake for 30 minutes.
