Cheesy Herb Mashed Potato Puffs
These cheesy herb mashed potato puffs are a delightful way to use up leftover mashed potatoes. They’re crispy on the outside, soft and cheesy on the inside, and loaded with flavor from cheddar, Parmesan, garlic, and fresh chives. Perfect as a snack, side dish, or appetizer!
INGREDIENTS:
2 cups mashed potatoes
1 cup shredded cheddar cheese
0.25 cup grated Parmesan cheese
2 large eggs
0.25 cup all-purpose flour
2 tbsp fresh chives chopped
1 tsp garlic powder
salt and pepper to taste
non-stick cooking spray
DIRECTIONS:
Preheat oven to 400°F (200°C) and spray a muffin tin lightly with non-stick cooking spray.
