Carrot Walnut Cake!

INGREDIENTS:

For the Cake:

1 1/2 cups all-purpose flour

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1 1/2 tsp ground cinnamon

1/4 tsp ground nutmeg (optional, but adds extra warmth)

3 large eggs , room temperature

1 cup granulated sugar

1/2 cup packed brown sugar

1/2 cup vegetable oil (or melted coconut oil)

1 tsp vanilla extract

1 1/2 cups grated carrots (about 2–3 medium carrots)

1/2 cup chopped walnuts , plus extra for garnish

For the Cream Cheese Frosting:

4 oz cream cheese , softened

1/2 cup unsalted butter , softened

2–3 cups powdered sugar , sifted

1 tsp vanilla extract

Pinch of salt

DIRECTIONS:

Step 1: Preheat & Prep

Preheat your oven to 350°F (175°C) . Grease a 9×9-inch square baking pan or line it with parchment paper for easy removal.

Step 2: Mix the Dry Ingredients

In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.

Step 3: Make the Cake Batter

In a large mixing bowl, whisk together the eggs, granulated sugar, and brown sugar until smooth.

Add the vegetable oil and vanilla extract, and mix until well combined.

Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Be careful not to overmix.
