Cheesy Stuffed Potato Cakes
INGREDIENTS:
• 2 large potatoes, peeled and boiled
• 1 cup shredded cheddar cheese
• 1/4 cup chopped green onions
• 1/4 cup chopped cooked bacon
• 1/4 cup sour cream
• Salt and pepper, to taste
• 1/2 cup all-purpose flour
• 2 eggs, beaten
• 1 cup breadcrumbs
• Vegetable oil, for frying
DIRECTIONS:
1. In a mixing bowl, mash the boiled potatoes until smooth.
2. Add shredded cheddar cheese, green onions, bacon, sour cream, salt, and pepper to the mashed potatoes and mix well.
3. Scoop about 2 tablespoons of the mixture and shape into a patty. Repeat with remaining mixture.
