3 pounds salmon.
Dijon mustard, 2 tbsp.
Kosher salt, 1 tbsp.
Lemon pepper seasoning, 3 tbsp.

DIRECTIONS:

Immerse wood chips in water for at least half an hour to prepare.
Inspect salmon filet and extract any pin bones using tweezers if found.
Clean salmon under water, then dry thoroughly with paper towels.
Liberally coat the flesh side with Dijon mustard.
Evenly disperse kosher salt and lemon pepper seasoning on the mustard.
Apply a thin layer of oil on the skin or use cooking spray to avoid sticking.
