Crispy Popcorn Chicken

A delightful treat of crispy chicken bites infused with a hint of spice, perfect for a snack or appetizer.

INGREDIENTS:

2 cups buttermilk.
1/2 tsp cayenne.
Hot sauce, 2 tbsp.
1 1/2 pounds boneless skinless chicken breasts chopped into 1-inch pieces.
2 1/2 cups all-purpose flour.
1 TBS EACH chili powder, salt.
2 tsp EACH paprika, onion powder, garlic powder.
1 tsp EACH baking powder, pepper.
Vegetable oil.

DIRECTIONS:

Mix buttermilk and hot sauce in a large bowl.
Add chicken pieces to the mixture and let them marinate for 30 minutes at room temperature or up to 12 hours in the fridge.
In another bowl, combine the flour, chili powder, salt, paprika, onion powder, garlic powder, baking powder, and pepper.
Using a slotted spoon, remove the chicken from the marinade, draining excess, and coat with flour mixture.
Repeat the process for a second coat by transferring chicken back to buttermilk and then flour.
