5 Minute Juicy Apple Pancakes
Serves 1–2
INGREDIENTS:
For the Pancakes:
1 medium apple , peeled, cored, and grated (about 1 cup)
1 large egg
2 tbsp all-purpose flour
1/2 tsp baking powder
1/2 tsp cinnamon
1 tbsp sugar (optional, if you prefer sweeter pancakes)
Pinch of salt
Butter or oil , for cooking
Optional Toppings:
Maple syrup
Whipped cream
Chopped nuts (walnuts or pecans work great!)
Extra cinnamon
DIRECTIONS:
Step 1: Mix the Batter
In a mixing bowl, combine the grated apple, egg, flour, baking powder, cinnamon, sugar (if using), and salt. Stir until just combined—the batter will be slightly lumpy, which is perfectly fine.
Step 2: Cook the Pancakes
Heat a nonstick skillet over medium heat and lightly grease it with butter or oil.
Scoop about 2 tablespoons of batter per pancake onto the skillet, spreading it slightly with the back of the spoon.
Cook for 1–2 minutes , or until bubbles form on the surface and the edges look set. Flip carefully and cook for another 1–2 minutes , until golden brown and cooked through.
Step 3: Serve
Stack the pancakes on a plate and top with your favorite toppings—drizzle with maple syrup, dollop with whipped cream, or sprinkle with extra cinnamon.
