5-Minute Healthy Oat Pancakes

INGREDIENTS:

1 cup (90g) rolled oats (gluten-free if needed)

1 ripe banana (or 1/4 cup unsweetened applesauce)

1 egg (or flax egg for vegan)

1/2 cup (120ml) milk (dairy or plant-based)

1 tsp baking powder

1/2 tsp cinnamon (optional)

Pinch of salt

DIRECTIONS:

1. Blend the Batter

In a blender, combine oats, banana, egg, milk, baking powder, cinnamon, and salt.

Blend until smooth (about 30 seconds).

2. Cook the Pancakes

Heat a non-stick pan over medium heat (no oil needed if non-stick).

Pour 1/4 cup batter per pancake.

Cook for 2-3 minutes until bubbles form, then flip and cook 1-2 minutes more.

3. Serve & Enjoy!

Top with fresh fruit, nut butter, or a drizzle of honey/maple syrup (if desired).
